Sweet Pumpkin Pie with Marshmallows - from SCRATCH

Gotta pumpkin left over that you didn't carve? Time for the best Thanksgiving pumpkin pie there is, fresh from scratch with plenty of sugar & spice, and marshmallows melted in. Leftovers? hahaha, no.

Who doesn't LOVE a great from-scratch recipe, and the food you can make is absolutely top-tier restaurant quality, for a fraction of the price. Here's a great "Pumpkin-Pie From Scratch" recipe that will have your friends and relatives coming back for seconds every time! This recipe uses half a pumpkin and makes two large pies, so consider also checking out a pumpin bread or pumpkin cake recipe to use for the other half of the pumpkin too angel


Ingredients per pie:

 
1/4 of a large pumpkin - 2 cups (baked, peeled, then mashed / puréed) 

1 large egg

1 can (8oz) sweetened, condensed milk

2 tsp ceylon cinnamon

0.5 tsp clove
 
0.5 tsp nutmeg

1 tsp fresh ground ginger

 
0.5 tsp salt

1 cup small marshmallows

           (cool whip topping optional)

 
1. Baking and Peeling the pumpkins

Pre-heat oven to 350ºF. Stab holes into your pumpkins with a large knife for ventilation. Place them on a baking sheet in the oven, on top of some parchment paper, for 60-90 minutes. They are ready when you can stab a fork into the pumpkin with very little resistance.

Let the pumpkins cool 30 min, then cut them in half and scoop out the seeds and strandy inside bits, with a big spoon. Save the seeds if you want to make roasted pumpkin seeds. Carefully peel the outer skin from each big piece of pumpkin and place them into a big bowl. 


2. Prepare the Pumpkin Mix

 
Now blend or mix the pumpkin to your desired level of smoothness.
Add in the egg, condensed milk, cinnamon, clove, nutmeg, ginger, and salt, but NOT the marshmallows frown

Mix / blend it really well, until all the ingredients are fully incorporated with each other, but don't whip it.  


3. Bake in TWO STAGES

 
STAGE ONE : Bake at 425ºF for 15 minutes

STAGE TWO : Bake at 350ºF for 25-30 minutes, until you can place a toothpick in and it comes out clean


4. Serving with Marshmallows

Spread the marshmallows spread into a thin layer on top of the pie

BROIL the pies FOR ABOUT 30-45 SECONDS, with the top of the pies about 5 inches away from the heat source

Cover with Cool Whip for extra credit!
